They're a cookie made in a flat iron. I want to say that they are Italian, but then I'd probably get yelled at by someone, but for lack of a better thing, they are Italian.
What kind of iron do you use? We make these every Christmas, trays and trays to give away (anise); the mom has two electric irons and one old long-handled one that we used to hold over the flame.
My mother has an Italian double iron that makes them bigger than the ones you showed, but my brother has one of the small double ones. We've only made the anise pizzeles, but I've seen vanilla in stores.
Okay, I found this really cool button on my computer called GOOGLE and found this:
For chocolate pizzelles, add 1/4 cup cocoa sifted together with flour and baking powder, 1/4 cup more sugar and 1/4 teaspoon more baking powder. I find that for the chocolate mixture, the iron must be well oiled to start and then brush on more as needed.
