I sent this recipe to [livejournal.com profile] paragraphs, but then I realised that it's the best cure for the winter blues.

2 c. milk
3 eggs
3/4 c sugar
1/2 tsp salt
1 c. cooked rice
1/4 c raisins (OPTIONAL!)
1 tsp vanilla
1/4 tsp cinnamon

Scald milk. Combine eggs, sugar and salt in a 1 1/2 qt. casserole dish. Stir in milk. Add rice, raisins, vanilla. Sprinkle with cinnamon. Bake at 325 until set (about 50-60 minutes).

If you have a big enough casserole dish, it's nice to double.

Regular rice. Though I use sweet rice because I have it on hand. But the recipe doesn't specify.

The one and only time I made rice pudding I thought I'd whisk the custard to make it light and fluffy.

It all separated during baking so I was left with a layer of sweet omlette and a layer of mushy rice.

Well, the rice does tend to settle a bit to the bottom, but you scoop it out and serve whole spoonfuls of it, so it's all mixed. and the casserole dish is shallow enough that it's only about 1 1/2 inches or so. Maybe 2.

Tried mixing it up at the time and ended up with white rice and little solid bits of yellow custard omlette.

Might have got away with it if I'd called it egg fried rice.

This month it's slow cooker time. Except I have to keep locking the wine away so I don't drink it all before adding it.

LOL, it's like a cross. There's definite rice in it, but it's def a custard. If you buy rice pudding at the store, it is not like this.
