Salty Caramel Chocolate Shortbread: SOLD OUT



THEY'RE BACK! These are the extras from a small batch I made for [livejournal.com profile] arsenicjade. I suppose if you want some and don't get these, you could stake out her house. Remember mail tampering is a felony.

These tiny shortbread cookies have layer of crème de salidou (buttery caramel made in Brittany), a dusting of French salt, and a topping of chocolate (a mix of semisweet and 80%). I am hoping they survive transit, but to be sure, if you live in southern climes, the shipping risk is on you.

Ingredients: butter, confectioners' sugar, cornstarch, flour, salt, Crème de Salidou, chocolate, sea salt.

Butterscotch Shortbread DESPERATE FOR A GOOD HOME!



I totally did a bad thing. I made shortbread from the leftover dough above. Then I melted cream and butterscotch chips. Then I glazed these things. Then I ate one. Then I died of bliss. This is my ghost talking. It's a good thing I have VRS, because my fingers keep going through the keys. These never really dried, so they're wrapped in wax paper, but they're always going to be a little sticky. Also, yay butterscotch!

Ingredients: butter, confectioners' sugar, cornstarch, salt, flour, cream, butterscotch.

Tianyu Ching Royal Cookies: SOLD OUT



As it was told to me, Tianyu's mother was making cookies, and a very young Tianyu came into the kitchen and started ordering her to put this in, put that in, etc etc. The end result was these cookies, loaded with chocolate and peanut butter chips, walnuts, and oats, with a hint of coffee. Tianyu as so pleased with the recipe that he wrote it down, and a copy has made its way into my hands (in his adorbs grade school cursive). It's just a list of ingredients, so I had to figure out how to do the construction and baking time and temp myself. The end result is a dense cookie, a little on the dry side, but rather like a hermit cookie. I am a bad judge. I hated last week's shortbread, but everyone I sent it to seemed to like it a lot. It passed the mum test (she ate 4).

Ingredients: unsweetened chocolate, flour, whole wheat flour, oatmeal, eggs, walnuts, chocolate, peanut butter chips, baking powder, vanilla, butter, sugar, instant coffee, cream

Your Royal Cookies have come out much smoother looking on top than Mom's usually do. She used to make them enormous and I think she just plopped large spoonfuls onto the baking sheet rather than making neat balls or what have you. Mmm, Royal Cookies.

Hahaha. Mom makes them fist-sized, literally. Adult fist-sized, that is. But they are MASSIVE and weighty, that's for sure. Did you omit the white chocolate chips? Mom used to keep all the chips in re-purposed glass jars, but sometimes Tianyu and I would just freaking eat the chips and nobody (ie, Mom) would find out until it was time to bake more cookies and THERE WERE NOT ENOUGH CHIPS.

I am holding off this time only cuz the shortbread ones were taken but no really because I ate all the last weekend's order in two days, and that was bad, and Blue is sending cupcakes anyway. Oh my gosh. I will never get over the peaches, I swear. :)

I did 375. It's the standard baking temp for cookies. I did them for about 12 minutes.

But they're too thick for my tastes (plus they have nuts). Bleaugh. I am going to fuck with them.

The instant coffeeis a nice touch, though.

They are incredibly dense, bordering on scone density imo, owing to the wheat flour and oatmeal, I think. We would eat one for breakfast.

I think bite-size peaches will be adorable! I would break open the big ones and eat half then half again later. The thought of putting one in whole, and savoring the flavors altogether--oh yeah. OH YEAH. Those and the short stacks are my two favs I've had by you. So far. LOL

Ditto. I chose unwisely, between helping the parents carry groceries in from the car before they pitched forward into the bottle brush tree and claiming these suckers on sight. And there's also the 90 degree weather, but I'm game.
